Cauliflower Korma

  • ginger
  • garlic
  • green chilis
  • raw cashew
  • a bit of onion
  • 1-2 cloves
  • fennel seeds

Grind all of the above into a paste

Cut onions and cauliflower
saute with the paste, 1-2 cloves and cinnamom

Add 1 chopped tomato and a can of coconut milk.

Salt to taste.

Feta, Cheddar and Spinach Muffins

Feta, Cheddar and Spinach Muffins 

(Recipe from Tasha - and these freeze well too!)


3 c.flour

2 ½ tsp. Baking powder

1 c.Cheddar

1 ½c. Feta pieces

1 c.Baby Spinach

1 Egg

1 c.Milk

1 tsp.Cayenne pepper

1 Tbs.Butter

½ sm. red onion



Preheat oven to 170 C or gas mark 3 

Melt the butter in a pan, added chopped onion and cook 

Add the dry ingredients into a large bowl 

In a separate bowl add the egg and milk and whisk 

Add the egg mixture into the dry ingredients

Chop the spinach finely

Add the onion and spinach into the muffin mixture by hand using a wooden spoon

Scoop into muffin cases using an ice cream scoop (this gives them a nice rounded shape)

Cook for 30-35 minutes

Life Changing Loaf - delicious hippie bread

You can read the full deets on the bread here. It is delicious, super filling and good for you! You can substitute nuts with whatever kind you have on hand. Note that you have to wait until the bread is COMPLETELY cooled or it is very crumbly. But still yum. Also, I think I might use chopped almonds next time because otherwise sometimes they are hard to cut or just fall out of the loaf when I am slicing.

The Life-Changing Loaf of BreadMakes 1 loaf
Ingredients:
1 cup / 135g sunflower seeds
½ cup / 90g flax seeds
½ cup / 65g hazelnuts or almonds
1 ½ cups / 145g rolled oats
2 Tbsp. chia seeds
4 Tbsp. psyllium seed husks (3 Tbsp. if using psyllium husk powder)
1 tsp. fine grain sea salt (add ½ tsp. if using coarse salt)
1 Tbsp. maple syrup (for sugar-free diets, use a pinch of stevia)
3 Tbsp. melted coconut oil or ghee
1 ½ cups / 350ml water
Directions:
1. In a flexible, silicon loaf pan combine all dry ingredients, stirring well. Whisk maple syrup, oil and water together in a measuring cup. Add this to the dry ingredients and mix very well until everything is completely soaked and dough becomes very thick (if the dough is too thick to stir, add one or two teaspoons of water until the dough is manageable). Smooth out the top with the back of a spoon. Let sit out on the counter for at least 2 hours, or all day or overnight. To ensure the dough is ready, it should retain its shape even when you pull the sides of the loaf pan away from it it.
2. Preheat oven to 350°F / 175°C.
3. Place loaf pan in the oven on the middle rack, and bake for 20 minutes. Remove bread from loaf pan, place it upside down directly on the rack and bake for another 30-40 minutes. Bread is done when it sounds hollow when tapped. Let cool completely before slicing (difficult, but important).
4. Store bread in a tightly sealed container for up to five days. Freezes well too – slice before freezing for quick and easy toast!

Idiot-Proof Banana Bread

I am not a baker, but this is a fool-proof recipe. I usually add chocolate chips and only use half the sugar. Very delicious!

(Idiot-Proof) Banana Bread
2 eggs
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup oil
3/4 cup sugar
2 or 3 bananas, mashed (older, mushy bananas are best)
1 teaspoon vanilla
1 cup walnuts chopped (optional)
 
Grease one large loaf pan or 2 small loaf pans. Mix all ingredients together and bake in a 350F oven for 50-60 minutes.

South Indian Eggplant Curry

Very delicious! Thanks to Prasanna for the recipe.

South Indian Eggplant Curry
-oil
-1 large eggplant
-1 onion, diced
-2 tsp fenugreek seeds
-Sri Lankan curry powder (or Indian chili powder)
-turmeric
-1 can coconut milk
-1 clove garlic
-curry leaves

1. Dice the eggplant
2. Fry eggplant in oil (like 1 tablespoon) until cooked and medium mushy
3. Place eggplant aside
4. Heat up one tablespoon of oil, saute diced onion. Add fenugreek seeds.
5. Add eggplant to pan. 6
6. Add 1 tbsp Sri Lankan curry powder, and 1 tbsp turmeric (or more, I have no idea because I never measure). Stir mixture.
7. Reduce heat. Add one can of coconut milk.
8. Simmer for a few minutes.
9. Add a handful of curry leaves and the minced garlic (more or less depending on preference).
10. Simmer a bit more, and you're done!!!

Green Tea Martini

  • 1 1/2 oz gin
  • 3 mint leaves
  • 1/2 oz lemon juice
  • 1/2 oz simple syrup
  • 2 oz chilled green tea
 
 
Pour ice into shaker.  Muddle mint leaves and then add all ingredients to shaker.  Shake and serve in a martini glass.
 
 
To make simple syrup add 1 cup of water to a saucepan and 1/2- 3/4 cup sugar.  bring to gentle boil until sugar has been combined with water.  cool.
